Instrumental methods of determining the degree of chitin deacetylation

Abstract. The overview of methods for determination the chitin and chitosan deacetylation degree has been carried out. The optical density of chitosan samples with different molecular weight in the infrared has been defined. The comparative results of measuring chitin deacetylation degree by the method of infrared spectroscopy and using registration of chitin acid hydrolysis product by the liquid chromatography method have been given.
